So fall is here. I work a job that I rarely get a real lunch (#nurselife). So I need something to keep me from going crazy on my busy days. I kept see @leefromamerica’s fat balls all over her Instagram and decided to try my hand at making some to have on hand for my busy days at work. Her recipe can be found here. They’re amazing. I crave them. Seriously.
So as I’m cutting out coffee (another blog, another day) I decided to combine my favorite fall drink… the infamous PSL and a fat ball recipe to tie me over on long days! Plus I need to get my pumpkin fix any way possible. Pumpkin IV anyone?
So here a rough recipe of how I make my yummy PSL fat ballz.
Handful of almonds
Handful of walnuts
Handful of sunflower seeds
Bulletproof collagen powder
Handful coconut shreds (unsweetened)
1 T Chia seeds
1 T Flax
1 T coconut oil or butter
2 t pumpkin pie spice (I love Trader Joes version!)
1 packet of Four Sigmatic’s superfood mushroom coffee (flavor of your choice, I use Lion’s Mane!)
Throw everything above in a food processor. Mix until wet dough forms. Form into small balls. Easy. Peasy. Done. Enjoy!
